 Ultimately you two will decide what kind of process you want, I've met with couples that preferred to meet at a park first, chat for a bit, feel out the vibes, and within minutes they knew if they were gonna have me follow them home or not, another couple just voice verified over a phone call and once they knew they texted the address.  I agree with hiking... you have to decide what you're comfortable with... and everyone's comfort level is different... I have met with couples that just wanted me to come to their hotel room and get busy... or they just came to mine... although meeting for drinks is fun too... as you're just starting out, that might be the way to go to be sure of the chemistry... and will also start building the sexual tension...
